These gluten-free s'mores brownies are warm, fudgey, a little crunchy, and have all the tastes of summer. With a base of my Super Fudgy Dairy-Free Brownie recipe, they are the perfect finale to a summer BBQ, or just a warm afternoon pick me up. Perfect for kids (and adults too!), these gluten-free s'mores brownies are sure to be a hit in your kitchen.

Ingredients Needed
Here is everything you'll need to make these gluten-free s'mores brownies:
The great thing about this recipe is that it comes together with just a couple of items. A few notes on the ingredients...
- Gluten-free brownie mix: Try it out with my Super Fudgy Dairy-Free Brownie recipe! Or grab your favourite box at the store and top it with s'mores goodness. Ensure you have any additional ingredients specified on the box.
- Mini marshmallows: Because a s'more wouldn't be a s'more without some toasty marshmallow! Mini marshmallows are super easy to sprinkle on top and create nice golden pillows on our s'mores brownies. Note that I have not tested the recipe with this substitution, but Dandies is a brand that makes vegan marshmallows. Try it as a swap if you wish. If you do, leave me a comment at the bottom of this post and let me know how they worked!
- Gluten-free graham crackers: Crushed gluten-free graham crackers give these soft and fudgy brownies so much crunch and texture. There are a few out there, but my favourite brand is the KinniKinnick S'moreables.
- Chocolate chips: You could also use chopped chocolate. Use dairy-free chocolate if required.
Step-by-Step Instructions
Be sure to read the recipe card below for the full ingredient list and instructions.
(Prep) Preheat the oven according to my brownie recipe, or your brownie mix instructions. Also, prepare an 8x8" or 9x9" baking dish to be lined on the bottom and sides with parchment paper.
(1) Follow the instructions in my Super Fudgy Brownie recipe to prepare the batter. Or mix the batter of your favourite gluten-free boxed brownie mix according to the package instructions. Be sure you have the additional ingredients required on hand.
(2) Once the batter is mixed, pour into the square baking dish lined with parchment paper. Smooth the top with a rubber spatula so that it is flat.
Bake according to the brownie instructions for 7 minutes less than the recommended baking time. There may be some trial and error here with cook times. In my opinion, a slightly underdone brownie is better than a cakey, overdone brownie.
(3) Carefully remove the baking dish from the oven and sprinkle the top with mini marshmallows, gluten-free graham crackers, and chocolate chips. Place the baking dish back in the oven for 7 minutes.
After 7 minutes, if your marshmallows are looking toasted enough, remove the baking dish from the oven. If you desire a bit more toast, turn the oven on high broil for about 30 seconds until it looks to your liking. Keep your eye on it though! Things will move fast.
Remove the baking dish from the oven and let the brownies cool in the pan for 10-15 minutes. Lift the parchment paper gently to remove the brownies from the pan, and transfer (still in the parchment) to a wire rack to cool mostly, about 20 minutes. Brownies are best served slightly warm and fudgy.
(4) Use a clean, sharp knife to slice the brownies into 9 large squares or 16 smaller ones. Tip: wipe your knife after every cut for cleaner cuts. Serve warm and enjoy!
Storage Instructions
If they don't fly off your counter within 5 minutes, gluten-free s'mores brownies can be completely cooled, stored in an airtight container, and kept on the counter or in the fridge for 2 days. I would not recommend freezing the brownies due to all of the toppings.
To Re-heat
To bring the s'mores brownies back to their ooey gooey goodness, place a square on a microwave-safe plate and microwave for 20-30 seconds. Enjoy warm!
Expert Tips
- Use your best judgement to work out the timing of when you should sprinkle the toppings on. I say 7 minutes because that amount of time in the oven gave my toppings some nice colour and gooey melting, without it being tooooo much. If the toppings are on the brownies too early, they may be in there too long and the marshmallows can basically dissolve into a sugar brick. If they're not in there long enough, you may overcook your brownies trying to get them to melt! In my opinion, slightly underdone, fudgey brownies are better than tough, overdone brownies. If you follow my instructions to add the toppings with 7 minutes left of cook time, you should have perfectly melty and golden toppings.
- Prepare the baking dish with parchment paper ahead of time. Another time saver!
- Work quickly while sprinkling the toppings on. We want the brownies out of the oven for as little time as possible.
- WATCH THE BROILER! If you choose to broil the tops of the brownies to brown the marshmallows just a little bit (which I recommend you do), please do NOT walk away from the oven. Do not even take your eyes off of the brownies. You can very quickly go from nicely browned marshmallows, to melted gooey sugar puddles, to a solid burnt brick. Which would be sad!
- Slice the brownies with a clean sharp knife. Wiping the knife with a paper towel after each slice will ensure that you have clean cuts!

While I have not tested the recipe with these substitutions, here is what you could swap to make these s'mores brownies dairy-free and vegan:
Brownie Batter: Ensure any butter used is dairy-free, and that there are no eggs required in your brownie mix.
Mini marshmallows: See the ingredient section above for a link to a vegan marshmallow brand called Dandies.
Graham crackers: Read the label to find a brand that fits your dietary restrictions. KinniKinnick S'moreables are gluten-free, dairy-free, and do not contain eggs.
Chocolate: Use your favourite dairy-free chocolate chips, chunks, or bar. I like Enjoy Life Foods.
My absolute favourite gluten-free brownie mix is from XO Baking Co. It is super fudgy and goes so well with these s'mores flavours. If you want to make brownies from scratch, then you have to try my Super Fudgy Dairy-Free Brownie recipe.
Unfortunately, I don't think so. Freezing and thawing may affect the marshmallows and graham crackers in a weird way. S'mores brownies are best when served warm, but can be stored in an airtight container for up to 2 days on the counter or in the fridge.
