- Cottage cheese—I typically use 2% but any will work. The higher fat the creamier the pudding will be.
- Cocoa powder—I usually use dutch processed cocoa powder, but natural will also work.
- Maple syrup—You could also use honey, agave, stevia, or your choice of sweetener.
- Vanilla extract emphasizes the chocolate flavor.
- Espresso powder like Nescafé Gold—this is optional, however a little espresso powder enhances the chocolate flavor without making the pudding taste like coffee. If you love mocha vibes, feel free to add a touch more.
- Note that no additional salt is needed since the cottage cheese has a natural saltiness.
