Ingredient Notes

Here are all the ingredients you'll need to make this cottage cheese pudding recipe:

  • Cottage cheese—I typically use 2% but any will work. The higher fat the creamier the pudding will be.
  • Cocoa powder—I usually use dutch processed cocoa powder, but natural will also work.
  • Maple syrup—You could also use honey, agave, stevia, or your choice of sweetener.
  • Vanilla extract emphasizes the chocolate flavor.
  • Espresso powder like Nescafé Gold—this is optional, however a little espresso powder enhances the chocolate flavor without making the pudding taste like coffee. If you love mocha vibes, feel free to add a touch more.
  • Note that no additional salt is needed since the cottage cheese has a natural saltiness.

Substitutions

Want to change up the flavor? Here are some substitution suggestions:

  • Add fruit! Top the pudding with strawberries, raspberries, blueberries, blackberries, chopped kiwi, mango, grapes, etc. Just about any fresh fruit will work.
  • Use melted chocolate like ¼ cup melted white chocolate or milk chocolate.
  • Add nut butter, granola, cookie butter, chopped nuts, chia seeds, or oats to the pudding for a different flavor, texture, and health benefits.

(1) In a food processor or blender, combine all ingredients. Blend until smooth and creamy.

(2) Pour into two small containers, cover, and refrigerate for at least 1 hour or overnight.

Storage

Refrigerate the cottage cheese pudding in covered jars for up to 5 days. I do not recommend freezing this pudding as the texture will be altered once thawed.

Expert Tips

Here are some of my tips and tricks for making cottage cheese pudding:

  • Higher fat cottage cheese will yield a creamier texture.
  • Blend until completely smooth to remove all the chunks of the cottage cheese, about 1-2 minutes.
  • Taste and adjust sweetness.
  • Add melted chocolate, nut butter, or any flavored extracts to change up the flavor.
  • Allowing the puddings to chill for a few hours will yield the best taste and texture so the flavors can mingle and the cottage cheese can set.
  • Top with whipped cream and chocolate shavings or even some fresh fruit.
  • Meal prep your desserts! These puddings will keep in the fridge for 4-5 days so you can grab a sweet treat on the go.

Frequently Asked Questions

I don't like cottage cheese, can you taste it in this pudding?

No! I don’t love cottage cheese on its own and I enjoy this pudding. It’s a great way to get in some protein and satisfy a chocolate craving.

Can I use a different sweetener than maple syrup?

Sure! Honey, agave, or even a few drops of liquid stevia work. Be sure to taste as you go since some sweeteners are more potent than others.

How is this different than cottage cheese chocolate mousse?

This pudding recipe has a thinner texture than a mousse would. Typically a mousse is more firm and airy vs this pudding is a little looser but still delicious by the spoonful.
