Ingredient Notes
Here are all the ingredients you'll need to make these protein s'mores:

- Graham wafers—the 10 wafers refers to the long rectangular graham crackers with a perforation in the middle. If your graham crackers are 2.5" squares, you'll need 20.
- Chocolate chips—dark or semisweet.
- Coconut oil—just a little to thin out the chocolate for spreading.
- Light Cool Whip—thawed in the fridge for a few hours.
- Vanilla whey protein powder—I use whey protein, but a plant-based protein will work too. I like to use the premier protein vanilla milkshake whey protein powder.
- Vanilla extract—to intensify the vanilla flavor.
Substitutions
Want to change up the flavor? Here are some substitution suggestions:
- Change the protein powder. For more chocolate s'mores flavor, you can use chocolate protein powder instead of vanilla. A marshmallow flavored protein powder would be extra delicious!
- Plant-based. I highly recommend the So Delicious Cocowhip as a dairy free replacement for Cool Whip. It is delicious. Use a plant-based protein powder and ensure your graham crackers are vegan.
- Gluten-free. Use gluten free graham crackers like Schar Honeygrams. You may need to use more if they are smaller.
- Use a different chocolate like white chocolate or milk chocolate.
- Add chopped fruit, nut butter, cookie butter, etc. to the Cool Whip filling for a different flavor.
Step-by-Step Instructions

Line a medium-size sheet pan with parchment paper. Arrange 5 graham wafers in a line, tops down.
Place the chocolate chips and coconut oil in a small bowl. Microwave in 30-second intervals, stirring until melted.
(1) Spread the melted chocolate over the entire surface of the graham wafers. Place in the freezer for 10 minutes to firm up.
(2) Stir together the light Cool Whip, protein powder, and vanilla extract. Quickly spread across the chocolate-coated graham wafers with an offset spatula. Place 5 graham wafers on top to align with the bottom ones.

(3) Freeze for at least 4 hours. You can eat them after 2 hours but they may still be quite soft and messy.
(4) Slice into 10 squares. Keep frozen until you’re ready to enjoy.

Storage & Freezing
Freeze protein s'mores on the sheet pan for at least 4 hours before transferring them to an airtight container. Keep in the freezer for up to 1 month.
Expert Tips
Here are some of my tips and tricks for successful protein s'mores:
- Let the chocolate fully harden so you can easily spread the Cool Whip after.
- Work quickly while mixing the Cool Whip.
- Freeze for at least 4 hours for firm bars. You can eat them after about 2 hours, but they may be quite soft.
- Change up the flavor by using chocolate protein powder or another flavor, and adding mix-ins like nut butter or chopped fruit.
- Eat straight from the freezer. They won't completely freeze solid due to the Cool Whip so they have the best texture straight from the freezer.

Ideally freeze the bars for 4+ hours for the perfect firm middle with a crunch on the outside. If you can't wait, you can eat them after 2 hours but the middle will be soft and may squish out. Keep the bars in the freezer.

- 1 tablespoon vanilla extract
