Ingredients & Substitutions
Here is everything you'll need to make this healthy buffalo chicken dip:

- Pre-cooked and shredded chicken breasts—use a rotisserie chicken for ease, or boil and shred 2 large chicken breasts.
- Cottage cheese—adds so much protein, and I promise it does not taste weird! I like to pre-blend this to remove the lumps. I use 2% cottage cheese.
- Shredded cheddar cheese—shred it yourself from a block, it will melt better than the pre-shredded stuff.
- Garlic powder, salt, and black pepper
- Buffalo wing sauce—use your favorite brand. Frank's is a classic! I've been loving the Buffalo Wild Wings medium sauce recently too.
- Light ranch dressing—ranch goes so well with buffalo sauce! A little adds a nice flavor to the dip. I like to use low fat.
- Sliced green onions or chives for topping
- For dipping: Corn tortilla chips, carrots, celery sticks, ruffle chips, baguette slices, pita chips, etc.
Equipment
This recipe requires minimal equipment. I recommend blending the cottage cheese to remove the lumps before mixing the sauce, but that is optional. You will also need a large mixing bowl, spatula, and a medium size oven-safe baking dish.

Make Ahead & Storage
Make ahead: You can mix the dip and place it in the dish the day before you want to serve it. Cover with foil and refrigerate, then bake as directed.
Storage: Leftover dip can be stored in the fridge in an airtight container for 2 days. Reheat again in the oven or microwave until warm.
Freezing: I do not recommend freezing this dip, as the cheese will thaw out quite watery.
Expert Tips
Here are some of my top tips and tricks for successful buffalo chicken dip:
- If you're not using a rotisserie chicken, boil and shred your own chicken breasts.
- Finely chop or shred the chicken for pieces in each scoop.
- Blend the cottage cheese before mixing the dip to remove the lumps.
- For a larger dip, use the leg meat from the rotisserie chicken and double all other ingredient quantities.
- Shred the cheddar yourself so it melts nicely.
- If you only have Franks Red Hot sauce, add 1 tablespoon of white vinegar for the buffalo sauce taste.
- Broil the dip at the end for a crispy cheese top.
- Serve with your favorite dippers!
- A dip so high in protein, you could eat half for dinner!
