- 2 cooked chicken breasts (400g) from a rotisserie chicken or boiled chicken breasts
- 1 cup cottage cheese blended if you like it smooth (250g)
- ½ cup buffalo sauce
- 2 tablespoon light ranch dressing
- ½ teaspoon each: garlic powder, salt, pepper
- 100 g shredded cheddar cheese
- 2 tablespoon chopped green onions
- For dipping: tortilla chips or sliced veggies
Preheat the oven to 400ºF. Shred or chop the chicken breast into small pieces.
In a large bowl, stir together the chicken, cottage cheese, buffalo sauce, ranch dressing, spices, and cheddar, reserving some cheddar for topping. Spread into a small oven-safe 8”x6" casserole dish. Top with additional cheddar cheese.
Bake for 20 minutes, broiling for the last 2-4 minutes.
Remove from the oven and sprinkle with chopped green onions.
Enjoy while hot by dipping tortilla chips or sliced veggies!
- I recommend using a pre-cooked rotisserie chicken, but you could also boil and shred 2 chicken breasts yourself.
- Shred the cheddar from a block yourself, it will melt better than the pre-shredded stuff.
- Make ahead: You can mix the dip and place it in the dish the day before you want to serve it. Cover with foil and refrigerate, then bake as directed.
- Storage: Leftover dip can be stored in the fridge in an airtight container for 2 days. Reheat again in the oven or microwave until warm.
- Freezing: I don't recommend freezing this dip.
