- Medium-size English cucumber—English cucumbers are the large, long ones. This is important because they are long enough to slice the cucumber ribbons, and they containe more moisture than the small Persian cucumbers.
- Fresh limes—Use fresh lime juice from real lime wedges, not bottled lime juice.
- Fresh mint leaves—Use good quality mint leaves without any browning.
- Granulated sugar—Use white sugar but brown sugar or coconut sugar could work in a pinch. I haven't tested it but a simple syrup could work too.
- Lime flavored sparkling water—It's important that you use lime flavored sparkling water to enhance the flavors of this mocktail. Plain club soda could work in a pinch, though the flavors will be more diluted. Try Bubly, Montellier, or PC sparkling water.
Substitutions
Here are some ways to change up this cucumber mint mojito:
- Use a different fruits—You could muddle strawberries, blackberries, blueberries, lemons, etc. instead of the cucumber and lime flavors.

(1) Use a vegetable peeler to cut a few strips of cucumber, lengthwise. Layer around the inside of two tall glasses. Set aside.
Cut a 3" section of cucumber, roughly chop it, and place in a cocktail shaker. Add 8 lime quarters, the mint leaves from 4 sprigs, and the sugar.
(2) Muddle for 2 minutes to release the juices then add some ice, close and shake.

Fill the glasses with fresh crushed ice.
(3) Strain the shaker into the glasses.
