Make fresh summer pineapple even better by coating it in chocolate! This simple 3-ingredient recipe doesn't require any baking and can be made in just 15 minutes. You won't be able to stop eating it! This recipe is gluten-free, dairy-free, and vegan.

This Chocolate Covered Pineapple is the ultimate summer snack! Juicy pineapple chunks are coated in rich dark chocolate. No crazy preservatives or additives like citric acid, soy lecithin, or tree nuts here! They are juicy, healthy, and super pop-able using fresh fruit!

Make them the way you like by changing up the chocolate, mixing in other fruits, or adding toppings. These chocolate pineapple bites are great to keep in the fridge and enjoy for a summer snack or dessert.

Ingredient Notes

Here are all the ingredients you'll need to make chocolate-covered pineapple:

  • Fresh pineapple: You could buy it pre-cut from the grocery store, or cut and core it yourself. You can slice it into rings, half rings, chunks, or use a cookie cutter for fun shapes. Use fresh real pineapple and not frozen.
  • Dark chocolate: I like 70% but you could go darker or choose milk chocolate. I recommend using a bar of chocolate as chocolate chips will melt quite thick.
  • Coconut oil: Just a little thins out the chocolate to the perfect dipping consistency. You could also use vegetable oil.

Substitutions

There are many ways to change up this chocolate pineapple. Here are some substitution suggestions:

  • Please do not swap fresh pineapple for frozen. It will be much too watery.
  • Swap out the dark chocolate for milk chocolate, semi-sweet chocolate, dairy-free chocolate, or white chocolate if you like!
  • While the chocolate is wet, you could sprinkle on flaky salt, cookie crumbs, or candies.
  • Use a different fruit like strawberries, blueberries, apples, etc. Or make multi-fruit clusters!

Step-by-Step Instructions

(1) Ensure the skin and core of the pineapple are removed before slicing the pineapple. You can slice it into rings, half rings, chunks, or use cookie cutters for fun shapes like in an edible arrangement!

(2) Roughly chop the dark chocolate into small pieces and place in a medium size bowl with the coconut oil. Microwave for 30 seconds, stir, then microwave again until melted.

(3) Use a fork to dip the pineapple slices or chunks into the melted chocolate at a time. Let the excess chocolate drip off and place the chocolate covered pineapple on a parchment or wax paper lined plate or baking sheet in a single layer.

(4) You could also simply drizzle the chocolate over the pineapple pieces. Top with flaky sea salt if you like. Repeat until all the chocolate and pineapple are used up.

Place in the fridge for at least 30 minutes to solidify.

(5) Transfer the chocolate covered pineapple to a closed container and enjoy straight from the fridge. They may melt quickly at warm temperatures.

Keep in the fridge for up to 3 days, if they even last that long!

Storage

Store chocolate covered pineapple in the fridge in an airtight container so it does not melt. If you've ever had store bought Tru Fru chocolate covered fruit, you could also store the pineapple similarly in a bag in the freezer and let thaw for a few minutes before enjoying, for longer storage.

Batching

Scale the ingredient quantities up or down if you want to make more or less. You can also add more fruit into the mix like chocolate covered cherries, strawberries, blueberries, or whatever your favourite is.

Expert Tips

Here are some of my top tips and tricks for successful chocolate covered pineapple:

  • Use a chocolate bar, not chocolate chips. Chocolate chips have stabilizers to help them keep their shape, which prohibits nice creamy melting.
  • Melt the chocolate and the oil together so there is no temperature change. Chocolate can be temperamental with temperature changes.
  • Ensure the pineapple chunks are as dry as possible. Pat them with a paper towel before dipping. Chocolate also hates water.
  • Place dipped pineapple on parchment paper on a plate or baking sheet for easy removal.
  • Keep in the freezer for longer term storage, and allow to thaw for 15 minutes before eating.

Frequently Asked Questions

Can I use frozen pineapple?

I really don't recommend it. The frozen pineapple will release so much water when thawed, that the chocolate may have a hard time sticking. Stick to fresh for this recipe.

What's the best way to cut a pineapple?

There are many ways to cut a pineapple—there are even gadgets that will core it for you. If you have that, great. If not, this is what I do.

1. Slice off the big top.
2. Slice off the prickly skin all the way around, cutting small vertical strips.
3. Make 4 vertical slices around the core.
4. Cut the slices lengthwise, then into small chunks.

If you want pineapple rings you may have to purchase a pineapple corer, then slice into thinner circles. Or buy it pre-cut at the grocery store.

I don't like dark chocolate. What can I use instead?

Bars of milk or white chocolate should melt and coat the pineapple similarly. They will taste a bit more sweet but still delicious.

Can I use other fruits?

Sure! Try blueberries, raspberries, strawberries, cherries—any fruit you like can be dipped in chocolate.

  • 100 g dark chocolate approximately 1 3.5 oz bar
  • 2 teaspoon coconut oil
