Cucumber Mojito Mocktail

Feel like you're at the beach with this non-alcoholic cucumber mojito mocktail. Made with simple ingredients like fresh lime, mint, and cucumber—you won't miss the alcohol with this much tropical flavor.

Ingredients

  • 1 medium-size English cucumber
  • 3 limes quartered
  • 6 sprigs fresh mint
  • 3 teaspoon granulated sugar
  • 1 can lime flavored sparkling water

Instructions

  • Use a vegetable peeler to cut a few strips of cucumber, lengthwise. Layer around the inside of two tall glasses. Set aside.
  • Cut a 3" section of cucumber, roughly chop it, and place in a cocktail shaker.
  • Add 8 lime quarters, the mint leaves from 4 sprigs, and the sugar. Muddle for 2 minutes to release the juices then add some ice, close and shake.
  • Fill the glasses with fresh ice. Strain the shaker into the glasses.
  • Top with lime sparkling water and lightly stir. Garnish with a lime wedge and fresh sprig of mint. Enjoy!

Notes

  • If you are having trouble placing the cucumber ribbon around the glass, use a straw, long spoon, or tongs to help position it.
  • Batching: Multiply the ingredient quantities by the number of drinks you wish to make. Muddle the cucumber, lime, mint, and sugar together in a pitcher. No need to shake and strain when building in a pitcher. When you're ready to serve, add the sparkling water to the pitcher and pour into individual glasses filled with ice.
