Who doesn't love a cool ice cream sammy on a hot summer day? And who doesn't love a thick and fluffy Belgian waffle? Imagine if we could combine those two together AND have it be gluten-free and dairy-free...
Insert these gluten-free and dairy-free waffle ice cream sandwiches! The perfect marriage of flavour, texture, and temperature. These things are so good, my sister, boyfriend, and grandparents ate them up in a hurry!

The inspiration
I was inspired by an event at work, actually. It was staff appreciation day a few weeks ago, and naturally this event was transitioned to a virtual format. We spent the whole day team building, doing some trivia, and participating in zoom cooking classes! This was my kind of event!
The classes were led by live chefs. We made some cold asian rolls as a main, which I will have a post on soon. But DESSERT was waffle ice cream sandwiches...and you know I love dessert.
Honestly I was kind of underwhelmed with how the chef made his ice cream "sandwich", as he simply scooped ice cream on top of a waffle. That is an open-faced sandwich, not a true eat-with-your-hands ice cream sandwich. So I decided to take mine to the next level.
I whipped out the Belgian waffle iron and got to work. As you can see, the final product was insanely decadent and everything I had dreamed of. If you want to know how you can make these deliciously refreshing gluten-free and dairy-free waffle ice cream sandwiches, then keep on reading!

Ingredients you need to make these waffle ice cream sandwiches
One thing I love about these waffle ice cream sandwiches is how easily they come together with minimal ingredients! While I created these to be as allergy-friendly as possible, you could certainly create this dessert recipe using gluten & dairy.
Gluten-free waffle mix: While you could certainly make your own mix from scratch, I found simplicity and success using the Kinnikinnick gluten-free waffle mix. It browned beautifully in the waffle iron, creating a crisp outside with a soft and pillowy inside. Amazing waffle mix all around! Note that you will also need any ingredients listen on the box to prepare the mix.
Cooking spray: To continually spray your waffle iron with each new waffle. This is for a crisp exterior and easy removal from the iron. I like to use the President's Choice coconut oil spray which is propellant free since it's just a bit healthier than Pam sprays.
Dairy-free ice cream: I chose to use the brand So Delicious for these waffle ice cream sandwiches. Their cashew-base ice creams are some of my ultimate favourite dairy-free ice creams. It is so creamy, you will think it's made from cream! I used the vanilla and salted caramel cluster flavours and they were both to die for. Even the dairy-lovers loved them.
Toppings: Just a lil something to make these sammies extra fun! I chose to roll the outside edges in some sprinkles and mini chocolate chips (I like the brand Enjoy Life Foods). Use what you like!

How to make these gluten-free, dairy-free waffle ice cream sandwiches
These desserts come together very easily, but time is of the essence when you're working with ice cream.
The first step is to bring out your Belgian waffle iron to pre-heat. This one here is very similar to the one that I use. While that's happening, you can prepare the entire box (454g) of waffle mix in a large bowl. Mix with the prescribed additional ingredients for your particular box mix.
Just before cooking, take your ice cream pints out of the freezer to begin to soften. You'll want to give them 20-30 minutes so they will be soft, but not liquid. Keep an eye on them, as different non-dairy ice creams may have different melting times.
Once ready, cook 4 full Belgian waffles, being sure to spray your iron each time for easy removal. When finished, place all waffles on a sheet pan.
Put the sheet pan of waffles into the freezer for 10-15 minutes so they can cool and slightly freeze.

Once your ice cream is soft, take the waffles out of the freezer. Spread each pint of ice cream on one waffle, then top with the 2 remaining waffles. You will have 2 large waffle sandwiches.
Leave the large waffle ice cream sandwiches on the sheet pan and place in the freezer for at least 3 hours.
Once you're ready to serve, cut each waffle sandwich into quarters along the pre-made lines of the Belgian waffle iron. You may have to let them soften up for a minute or run your knife under warm water and dry before cutting. You will end up with 8 perfectly sized sandwiches.
If you wish, roll the edges in a topping of your choice. Sprinkles, mini chocolate chips, nuts, you name it!
Now you are ready to enjoy! These waffle ice cream sandwiches will keep in the freezer for up to 1 week. When you're ready to enjoy, let it sit out for 5 minutes to soften slightly.

Gluten-Free Waffle Ice Cream Sandwiches (Dairy-Free)
Equipment
- Belgian waffle iron
Ingredients
- 1 box Gluten-free waffle mix with the ingredients required to prepare it
- Cooking spray I like coconut oil spray
- 2 pints Dairy-free ice cream
- Handful Sprinkles and mini chocolate chips
Instructions
- Turn on your Belgian waffle iron to pre-heat.
- Prepare the entire box of gluten-free waffle mix according to package instructions.
- Take your pints of dairy-free ice cream out of the freezer so they have about 20-30 minutes to thaw. You want the ice cream to be soft but not liquid.
- Cook your Belgian waffles until crisp and golden. Use cooking spray each time so they can be removed easily. I got 4 large Belgian waffles from a 1 lb waffle mix box.
- Put your Belgian waffles on a sheet pan and place in the freezer for 10-15 minutes.
- On the sheet pan, spread each pint of ice cream on one waffle. Top each with a second waffle and put the sheet pan back into the freezer for at least 3 hours.
- After 3+ hours, you can take the large waffle sandwiches out of the freezer and slice each sandwich into quarters along the pre-made lines of the Belgian waffle iron.
- If you wish, roll the edges of the sandwiches in sprinkles, mini chocolate chips, or both! These waffle ice cream sandwiches can be stored in the freezer for up to a week, just let them thaw for 10 minutes before eating. Enjoy!
