Why You'll Like This Recipe

  • Delicious spring/summer side dish. When asparagus is in season, this is the perfect recipe to make!
  • Perfectly salty. The prosciutto and parmigiano reggiano add a delicious saltiness to the asparagus.
  • Easy side dish that is made start to finish in 20 minutes.
  • Pairs well with any protein. Chicken, pork, beef, etc.
  • Roast in the oven or cook in the air fryer!

Ingredient Notes

Here is everything you'll need to make this prosciutto-wrapped asparagus:

ingredients to make prosciutto wrapped asparagus.
  • Asparagus: Pick a good bunch of local asparagus if you can find it. The thicker the stalks, the better. Note that this may make your cook time a minute or two longer. Be sure to wash thoroughly and trim off the woody ends.
  • Prosciutto slices: Normally eaten fresh and cured, salty prosciutto in the oven caramelizes and creates the perfectly crunchy coat for the fresh asparagus.
  • Olive oil: Or use any oil in a pinch.
  • Parmigiano Reggiano: I recommend freshly grated parmigiano reggiano cheese from Italy. You could substitute with pecorino romano.
  • Lemon juice: Fresh lemon is best.
  • Salt & ground black pepper: Just a pinch is good, as the prosciutto and cheese are both already salty.

Step-by-Step Instructions

(1) Preheat oven to 400°F. Wash and dry the asparagus. Trim the bottoms about 1 inch to remove the woody stem.

(2)Wrap each asparagus with a slice of prosciutto. If your prosciutto is quite wide, cut each slice in half lengthwise for double the pieces. Lay on a prepared baking sheet lined with parchment paper.

(3)Top the asparagus with a drizzle of olive oil, freshly grated parmesan, a squeeze of lemon juice, a pinch of salt and freshly ground black pepper.

(4)Bake at 400°F for 10-12 minutes, depending on asparagus thickness.

(5) Garnish roasted asparagus with more parmesan and another squeeze of lemon. Enjoy!

Storage

Store any leftover wrapped asparagus in an airtight container in the fridge and eat within 2 days. Re-heat in the microwave, air fryer, or oven until warm.

Expert Tips

Here are some of my top tips and tricks for the best oven-roasted asparagus:

  • Cut off the bottom inch of the asparagus to remove the tough, woody end.
  • If you have very skinny asparagus, you can wrap the prosciutto around 2 or 3 stalks for prosciutto wrapped asparagus bundles.
  • Watch the asparagus while in the oven, as the thickness of the stalks may lend them to cook quicker or slower.
  • Arrange the asparagus in a single layer while baking to avoid crowding.
  • Top with more parmigiano reggiano and lemon juice after baking to enhance the flavor.
  • Add lemon zest after baking for even more flavor.
  • For some balanced sweetness, drizzle the baked asparagus with some balsamic glaze.
