- Asparagus: Pick a good bunch of local asparagus if you can find it. The thicker the stalks, the better. Note that this may make your cook time a minute or two longer. Be sure to wash thoroughly and trim off the woody ends.
- Prosciutto slices: Normally eaten fresh and cured, salty prosciutto in the oven caramelizes and creates the perfectly crunchy coat for the fresh asparagus.
- Olive oil: Or use any oil in a pinch.
- Parmigiano Reggiano: I recommend freshly grated parmigiano reggiano cheese from Italy. You could substitute with pecorino romano.
- Lemon juice: Fresh lemon is best.
- Salt & black pepper: Just a pinch is good, as the prosciutto and cheese are both already salty.

(1) Preheat the oven to 400°F. Wash and dry the asparagus. Trim the bottoms about 1 inch to remove the woody stem.
(2)Wrap each asparagus with a slice of prosciutto. If your prosciutto is quite wide, cut each slice in half lengthwise for double the pieces. Lay on a baking sheet lined with parchment paper.
(3)Top the asparagus with a drizzle of olive oil, freshly grated parmesan, a squeeze of lemon juice, and a pinch of salt and pepper.
