- Sourdough bread: Though a crunchy, toasted sourdough is my favourite, any type of bread will work for this sandwich—even gluten-free bread if required.
- Chipotle mayonnaise: Buy a spicy mayo or make your own by combining 1 tablespoon mayonnaise with 1 teaspoon hot sauce. Adjust as you like.
- Green leaf lettuce: This is my favorite sandwich lettuce. Use what you have—spinach, spring mix, iceberg, arugula or romaine lettuce will all work.
- Large ripe tomatoes: I like a big thick slice of tomato in a BLT. Heirloom tomatoes would also be great.
- Thick-cut bacon: Pre-cook the bacon for easy prep. Turkey bacon will also work.
- Avocado: You can tell ripe avocados when you hold it and it gives slightly. It should squish a little without feeling too soft or too hard. Use fresh avocado, not an avocado spread.
- Salt and black pepper to taste.

(Prep) Cook the bacon ahead of time for quick assembly. I like to bake it in the oven for easy clean up.
Cover a large baking sheet with tin foil, then a layer of parchment paper. Lie the bacon slices on top. Cook at 400ºF for 20-25 minutes until crispy. Place the slices on a paper towel lined plate to drain the excess grease. Use immediately or store in the fridge for up to 4 days and re-heat in the microwave when making a sandwich.
Allow the grease to solidify on the baking sheet, then throw away the parchment and foil for easy clean up.
(2) Slice two pieces of sourdough bread and toast until lightly golden. Spread with spicy mayonnaise.
