BLT with Avocado
Jazz up a classic BLT sandwich with some fresh avocado. Spread on some spicy mayonnaise, crisp lettuce, fresh tomato, and crunchy bacon, and you have a quick and delicious sandwich for lunch!

- 2 slices sourdough bread or gluten-free bread if required
- 1 tablespoon chipotle mayonnaise
- 1 leaf green leaf lettuce
- 3 large tomato slices
- 2 slices thick cut bacon cooked
- ¼ avocado sliced
- Salt and pepper to taste
Cook the bacon ahead of time for quick assembly. I like to bake it in the oven for easy clean up. Cover a large baking sheet with tin foil, then a layer of parchment paper. Lie the bacon slices on top. Cook at 400ºF for 20-25 minutes until crispy. Place the slices on a paper towel lined plate to drain the excess grease. Use immediately or store in the fridge for up to 4 days and re-heat in the microwave when making a sandwich. Allow the grease to solidify on the baking sheet, then throw away the parchment and foil for easy clean up.
Slice two pieces of sourdough bread and toast until lightly golden. Spread with spicy mayonnaise.
Layer the sandwich with a piece of lettuce, then tomato slices. Season the tomato slices with salt and pepper. Add the bacon, and place avocado slices on top.
Close the sandwich with the top piece of bread, slice in half with a serrated knife, and enjoy immediately!
- Bread: Sourdough with a little crunch is best for this sandwich, but really any bread can be used, even gluten-free bread.
- If you don't eat bacon, you could use any deli meat in its place.
- Make your own spicy mayo by stirring together 1 tablespoon mayo and 1 teaspoon hot sauce. Adjust to your taste preferences.
- Make the bacon ahead of time for easy prep throughout the week.
- Prepared sandwiches can be wrapped in plastic wrap and stored in the fridge for 12 hours. Note that it will not be as crispy, but still delicious.
