Cottage Cheese Chocolate Puddings

- 1 cup cottage cheese
- 3 tablespoon cocoa powder
- 3 tablespoon maple syrup
- 2 teaspoon vanilla extract
- ¼ teaspoon espresso powder like Nescafé Gold, optional
In a food processor or blender, combine all ingredients. Blend until smooth and creamy.
Pour into two small containers, cover, and refrigerate for at least 1 hour or overnight.
Enjoy topped with whipped cream and chocolate shavings!
- I typically use 2% cottage cheese, but any will work.
- Espresso powder is finely ground instant coffee. I use Nescafé Gold brand, but you can omit this ingredient if you want.
