Pesto Puff Pastry Trees

- 1 sheet puff pastry thawed in the fridge overnight or on the counter for 2 hours
- ½ cup pesto homemade or store-bought
- 1 cups shredded cheese I use mozzarella mixed with parmesan
- 1 egg
- Optional: red chili flakes
Preheat the oven to 375ºF and line a large baking sheet with parchment paper.
On the counter, roll out the puff pastry sheet. Spread the pesto all the way to the edges. Sprinkle with cheese and chili flakes if desired. Press the cheese into the pesto.
Use a sharp knife or pizza cutter to slice the puff pastry into 1 inch wide strips.
One strip at a time, lay the puff pastry on top of itself to resemble a tree shape, wider at the bottom to narrow at the top. Place on a wooden skewer straight through the middle. Lie the tree down on the baking sheet. Repeat with all the puff pastry.
In a small bowl, whisk the egg and use a pastry brush to gently eggwash the trees. Bake for 15-20 minutes until golden. Enjoy!
- You only need 1 sheet of puff pastry for this recipe. If you want, you can use 2 and place one on top of the cheese for fuller trees.
- While homemade pesto will taste best, this is a good use for jarred pesto since it will be baked anyways.
- You can use whatever cheese and add any more spices you like.
