Aperol Coconut Margarita

Cool off with this refreshing Aperol Coconut Margarita—ready in 3 minutes with just 4 ingredients! It’s the perfect combination of sweet, salty, and spicy, making it your new go-to summer cocktail.

Ingredients

  • 2 oz Aperol
  • 1 oz tequila
  • 1 oz fresh lime juice from 1 whole lime
  • ¾ oz cream of coconut
  • Spicy tajin rim, optional

Instructions

  • Rim a short glass with lime and spicy tajin or plain salt.
  • Add the ingredients to a cocktail shaker with ice and shake until frosty.
  • Fill the glass with fresh ice and strain into the cup. Garnish with dehydrated citrus and a little Thai chili if you dare.

Notes

  • I use Coco Reàl Cream of Coconut which is a sweetened coconut syrup for cocktails. You could alternatively use ¾ oz of real coconut milk and ¼ - ½ oz simple syrup depending on how sweet you like your drinks.
  • Make this drink spicy by muddling in some sliced jalapeño or thai chili before adding the ingredients to the shaker. Be careful since these can be quite hot.
  • Batching: Make a larger quantity of drinks by stirring the ingredients together in a pitcher. Multiply the ingredient quantities by the number of drinks you wish to make. Don't add ice to the pitcher, add it directly to the glasses when serving.
