Juicy Gluten-Free Burgers

These quick and easy gluten-free burgers are insanely juicy, simple to prep, and grilled to perfection in under 30 minutes. Enjoy a steakhouse quality burger at home, but with ingredients you can feel good about. Easily made dairy-free. The only burger recipe you need!

Equipment

  • Grill, grill pan, or cast iron skillet
  • Meat thermometer

Ingredients

  • 3 lbs lean ground beef
  • ¼ onion, finely diced or 1 shallot
  • 3 garlic cloves, minced about 2 tsp
  • cup milk
  • 2 tablespoon gluten-free worcestershire sauce I use French’s. Omit if you can’t find
  • 2 tablespoon ketchup
  • ½ cup gluten-free breadcrumbs
  • 2 ½ teaspoon salt
  • Few cracks of black pepper
  • Your choice of burger toppings see suggestions below

Instructions

  • Place all ingredients in a large bowl. Use a spatula or your hands to mix until just combined.
  • Divide the burger meat into 5-6 oz balls (150-170g). These burgers are pretty large, so depending on the size you will yield about 10-12 burgers. Use a kitchen scale if you have one, or divide and eyeball it.
  • Form the balls into patties about 3 inches in diameter. They will be quite thick. Press your thumb into the centre of the patties to prevent swelling as they cook. Place patties on a parchment lined baking sheet. If you are preparing them in advance, place the patties in the fridge until ready to cook. Or you can grill immediately.
  • Preheat your grill (or grill pan or cast iron skillet) to medium heat, about 400ºF. Grill on one side for 3-5 minutes. The burgers will release when they are ready to be flipped. Flip and cook for another 2-4 minutes until desired doneness. Use a probe meat thermometer to check the internal temperature.
    130-140ºF: Medium Rare
    140-150ºF: Medium
    150-160ºF: Medium Well
    160-170ºF: Well Done
  • Allow burgers to rest on a plate for a few minutes. Serve on toasted gluten-free buns with your favourite toppings. Enjoy!

Notes

  • Toppings to try: Sliced tomatoes, red onion, ketchup, mustard, pickles, relish, green leaf or iceberg lettuce, mayonnaise, caramelized onions, cheese, or anything you enjoy on a toasted gluten-free bun.
  • Dairy-Free: Use your favourite dairy-free milk in the patties.
  • Make Ahead: Prepare the patties and place them on a baking sheet or in a container, cover, and store in the fridge up to 24 hours in advance.
  • Storage: Cooked burgers will keep in the fridge for 5 days. Reheat on the stove for a few minutes on each side, in the microwave in 20 second intervals, or in the air fryer for a few minutes until warmed through.
  • Freezing: Prepare the patties and flash freeze them on a baking sheet for 10 minutes. Then transfer patties to a freezer bag or container. Freeze for up to 2 months, then thaw overnight in the fridge before grilling.
