This gluten-free minestrone soup is a great way to use leftover vegetables hanging around. This soup is easy to make in just 1 hour. It is naturally vegetarian, and easily dairy-free or vegan.

What is minestrone soup?

Minestrone is an Italian soup made from a tomato base, filled with vegetables, beans, and pasta. No two recipes are alike. There is no right or wrong way to make minestrone.

Ingredients Needed

(1) Sauté carrots, onion, and celery in olive oil for 5 minutes. Add garlic and cook for 1 minute more.

(2) Add the potato, zucchini, tomatoes, broth, spices, wine and bay leaf. Stir and bring to a boil. Reduce the heat to low and simmer for 30 minutes. Partially cover the pot.

(3) Cook the gluten-free pasta in a separate pot while the soup simmers. Drain and set aside.

(4) After 30 minutes, add the beans. Add fresh parsley to the soup. Simmer for 5-10 more minutes. Remove the bay leaf.

(5) If you will be eating all the soup in one sitting, add the pasta to the pot. If you will not finish all the soup, add some pasta in each bowl. To serve, top with parsley and parmesan. Enjoy warm!
