These soft pumpkin sugar cookies are full of fall flavour. Soft and chewy with a cream cheese flavoured icing, you will never guess these cookies are gluten and dairy-free!

Cookie Ingredients

Cream Cheese Icing Ingredients

(1) Cream together brown sugar and butter.

(2) Add the rest of the wet ingredients. The batter will look chunky.

(3) Stir in the dry ingredients.

(4) Chill the dough for 1 hour.

(5) Place 8 cookie dough balls on a baking sheet. Bake at 325ºF for 20-22 minutes.

(6) Make the cream cheese icing while the cookies cool.

(7) Ice the cooled cookies with an offset spatula.

(8) Dust with cinnamon if you wish.

Enjoy these gluten-free (and dairy-free) soft pumpkin sugar cookies cold or at room temperature.
