Ingredients

– butter  – coconut sugar  – vanilla extract – egg yolks – gluten-free all-purpose flour with xanthan gum – almond flour  – baking soda – salt – mini eggs – chocolate chips – flakey sea salt

Before you begin, crush your mini eggs. Put them in a plastic bag and crush with a small mallet.

Whisk together the butter, coconut sugar, vanilla and egg yolks.

Add the dry ingredients and stir to combine the dough.

STEP 4

Add the crushed mini eggs and chocolate chips. Form into 16-18 balls and freeze for 45 minutes.

Bake at 375ºF for 12-14 minutes. Top with more mini eggs.
